Crispy Poha/ Avalakki mixture


Ingredients:

Gatti Avalakki/ Hard Poha/ Flattened rice – 500 gm

Peanuts – 1 cup

Curry leaves – small bunch

Red chilli powder as per taste

Turmeric powder – 2 tsp

Salt as per taste

Oil for deep frying


Instructions:

        Take a deep-frying pan and add some oil in it. Switch ON the flame and allow the oil to heat. When the oil is heated, add the hard Poha/ gatti Avalakki/ flattened rice into it. Stir occasionally for even frying. In no time, they all start to sizzle and puff up.  

TIP 1: Always add the hard Poha into the deep fry strainer. Then, slowly immerse the strainer into the hot oil to prevent any oil from spluttering. This method also eases our task while dishing out.

TIP 2: Always use medium to high heat while deep frying. Otherwise, the Poha doesn’t puff up well making it less crisp.

          When the Poha turns white and crisp, it means that they are ready. Dish them out into a clean and dry container or place them over a tissue paper to remove any excess oil.

          Follow the same process until all the Poha is fried. Switch OFF the flame. Now, sprinkle some red chilli powder and salt over them. Toss them well for even coating. If required, you may also add more red chilli powder and salt while tossing. Now, add turmeric powder and toss well. This adds a dashing colour to the crispy Poha.

          Lastly, switch ON the flame and heat the oil. When the oil is heated add peanuts into it and deep fry them under medium flame stirring occasionally. When they start to splutter and slightly change the colour to light brown dish them out into the crispy Poha container. Similarly, deep fry fresh curry leaves in the hot oil. When they sizzle and turn crisp dish them out in to the Poha container. Additionally, you may also add deep fried minced garlic if you prefer. Toss well. That’s it. Crispy and Crunchy Poha mixture is ready. Allow the Poha mixture to cool down under room temperature for 15 to 20 minutes. You may now store them in an airtight container for later consumption.
