Jackfruit Idly

Jackfruit Idly Ingredients: Ripe jackfruit – 2 cups, de-seed the pods and separate the flesh Rice – 2 cups Freshly grated coconut – 1 cup Crushed Jaggery – 4 tbsp Green cardamom powder – ¼ tsp Fresh banana leaf – 1 big size Idly maker Instructions: Wash the rice and rinse well to get rid of any dirt or dust. Soak the rice in water for about 6 to 8 hours (or) overnight. Add soaked rice into the blender and blend into coarse powder. Now, add ripe jackfruit flesh and blend into fine paste. There is no need to add any water while blending as the liquid from the juicy flesh is enough to grind. While blending taste the batter and adjust the sweetness accordingly by adding more ripened flesh. TIP 1: Make sure that the batter is thick like idly batter and not runny. Take a small bowl. Add grated coconut, crushed jaggery and cardamom powder into it. Mix well and set it aside. Clean the banana leaf and cut it into palm sized rectangles. Soft and fluffy idlis

Tips and tricks to make spongy & soft idlis at home  Ingredients:  Idli rice – 4 cups  Dosa rice – 1 cup  Urad dal/ Split black gram – 1.5 cups  Flattened rice/ Thick Poha – 1/2 cup  Cooking soda – 1 tbsp  Salt as per taste  Oil for greasing  Idli stand  Instructions:  Batter preparation:          Add idli rice, dosa rice and urad dal into a big container. Rinse them in water and wash thoroughly to get rid of any dust or dirt. After rinsing well, soak them in water for atleast 6 to 8 hours. Drain the water and add the soaked grains into a grinder/ blender and grind/ blend them into nearly fine paste or coarse paste depending upon your preference. While grinding, add little water whenever required but make sure that the batter is thick and not runny in texture. Peanut Chutney

Roasted Peanuts chutney: Easy and quick to make for Dosa, Idli or Chapatis Ingredients:  Roasted peanuts – 1 cup  Spicy Green chillies – 9  Red onion – 3/4 small size  Peeled Garlic – 10 cloves medium size Coriander leaves – small bunch Tamarind – 1 small marble size, cleaned and soaked in water for 10 to 15 mins Mustard seeds – 1 tsp Curry leaves – 2 sprigs Oil for tempering   Instructions:         In a thick kadai, add the green chillies, a tsp of oil and stir fry until they are slightly brown. Now, add onions, garlic, tsp oil and stir fry until onions are translucent. Add coriander leaves and stir fry until they wilt. Add roasted peanuts, soaked tamarind, salt, little water and the above fried mixture into the blender. Grind them coarsely or fine as per your preference.
