Jackfruit Idly
Ingredients: Ripe jackfruit – 2 cups, de-seed the pods and separate the flesh Rice – 2 cups Freshly grated coconut – 1 cup Crushed Jaggery – 4 tbsp Green cardamom powder – ¼ tsp Fresh banana leaf – 1 big size Idly maker Instructions: Wash the rice and rinse well to get rid of any dirt or dust. Soak the rice in water for about 6 to 8 hours (or) overnight. Add soaked rice into the blender and blend into coarse powder. Now, add ripe jackfruit flesh and blend into fine paste. There is no need to add any water while blending as the liquid from the juicy flesh is enough to grind. While blending taste the batter and adjust the sweetness accordingly by adding more ripened flesh. TIP 1: Make sure that the batter is thick like idly batter and not runny. Take a small bowl. Add grated coconut, crushed jaggery and cardamom powder into it. Mix well and set it aside. Clean the banana leaf and cut it into palm sized rectangles. Pick the cut banana leaf and place it over the palm. Pour some sweetened jackfruit batter over the banana leaf and slightly spread it across using a ladle. Add crushed jaggery and grated coconut mixture in the centre of the batter and fold the banana leaf. This way the sweet stuffing remains in the centre covered by the sweet jackfruit batter around it. Place this banana leaf in the well of an Idli stand. Follow the same process until all the wells of the Idli stands are used up.
Pour some water in the Idly container. Switch ON the flame and heat the water on medium flame. When the water is hot place the idly stands in the Idly container one over the other and close the lid. Steam these idlis for about 8 to 10 minutes. Switch OFF the flame and let them rest for another 5 minutes. Open the lid. Pick the steamed Jackfruit idlis and place them over a plate. Gently, open the banana leaf and remove the idlis. Place them in a clean and dry container. Follow the same process and steam the idlis until all the batter is used up. Simple and tasty Jackfruit idlis are ready. Serve them hot with a teaspoon of ghee or honey spread over them. These fruits are the largest fruits in the world and are consumed in both ripe and unripe form. The seeds from the ripe fruits are edible and may be boiled or roasted. They are similar to Brazil nuts and taste like Chestnuts when roasted. Both flesh and seeds of the jackfruit are used to make various cuisines, snacks, smoothies and desserts. It is a state fruit of the Indian states of Kerala and Tamil Nadu. Jackfruits are seasonal crops and ripen during Summer season. Each fruit is so huge and contain many fleshy fibrous fruits inside.
