Soya chunks Vegetable Fried rice Ingredients: Rice – 3 cups, pre-cooked and cooled Soya chunks – 1/2 cup Paneer – 1/4 cup Grated coconut – 1/3 cup Carrot – 1 medium size, thinly sliced French beans – 10 medium size, finely chopped Green bell pepper – 1/2 small size, thinly sliced Red Onion – 1 small size, thinly sliced Green chilli – 7 medium size, finely chopped Garlic cloves – 8 medium size, finely chopped Coriander leaves – 1 small bunch, finely chopped Black Pepper powder – 2 tsp Chilli vinegar – 2 tsp Dark soy sauce – 1 tsp Oyster wok sauce – 1.5 tsp Salt as per taste Oil for sautéing Instructions:         Pre-cook the rice and cool it completely before preparing the fried rice. You may also use left over rice for this recipe provided you sprinkle some water over the rice while mixing it with the cooked veggies during the fried rice preparation.    ...

Millet Vegetable Fried rice

Millet Vegetable Fried rice   Ingredients:  Barnyard Millet – 2 cups, pre-cooked and cooled Eggs - 6 Grated Paneer/ cheese – ½ cup Grated carrot – 1 big size  Green bell pepper – 1 small size, thinly sliced  Red Onion – 1 small size, thinly sliced  Green chilli – 2 medium size, vertically slit  Black Pepper powder – ¼ tbsp  Dark soy sauce – 1/2 tsp Chilli vinegar – 2 tsp Oyster wok sauce – 1 tsp Oil for sautéing  Salt as per taste  Instructions:           Wash the millets to get rid of any dirt or dust. Soak the millets in water for 15 to 20  minutes before cooking. Since I am using 2 cups of millets, I have soaked them in 4 cups  of fresh water. Millet Rice with Pesto sauce and Egg Ingredients:  Kodo Millet rice – pre-cooked and cooled, 1 cup  Pesto sauce – 1/4 cup  Fresh eggs – 3  Onion – 1 small thinly sliced  Cumin seeds – 1 tsp  Pepper powder – 1 tbsp  Red chillie powder – 1 tsp  Coriander leaves – few for garnish (optional)  Salt as per taste  Oil for stir fry Instructions:         In a small thick bottomed stir fry pan add some oil and heat it. Once the oil is heated, break open the eggs. Add salt, chillie powder, pepper powder and stir fry until it is soft and well done. Dish out the scrambled egg into a plate. In the same pan, add some oil. Once the oil is heated, add red onion slices and saute until they turn translucent. Now, add pesto sauce and saute well until the oil oozes out from the mixture.
