Roasted Cashew nuts

Roasted Cashew nuts Ingredients: Cashew nuts – 1 small cup Turmeric powder – ¼ tsp Red chilli powder – ½ tsp Ghee – ½ tbsp Salt as per taste Instructions: Take a shallow frying pan and heat it. When the pan is hot add cashew nuts, ghee and roast them until they slightly change the colour to light brown. Put off the flame. Add red chilli powder, turmeric powder, salt and mix well. Quick and tasty roasted cashew nuts are ready. Let them cool down under room temperature before you serve. This way the crunchiness is retained and they taste much better than the nuts which are still hot. You can also store them in an air tight container for later consumption. You can serve them with tea as evening snacks or savour them as pass time snack. You can also pack them as light snacks for school going kids. Coconut Burfi

Coconut Burfi Ingredients: Grated Coconut – 400 gm Sugar – 1 Kg Ghee – 1.5 tbsp Raisins – 25 gm Broken Cashew nuts – 25 gm Green Cardamom powder – ½ tsp Instructions: In a small kadai add ghee (1 tbsp) and broken cashew nuts. Heat the pan over medium flame and fry the cashew nuts until they slightly change the colour to brown. Now, add raisins and sauté until they puff up. Switch OFF the flame and set aside. Take a thick bottomed container and add sugar along with a small glass of water. Switch ON the flame and set it on medium heat. Keep stirring the sugar syrup every now and then until the sugar dissolves. Continue to boil the sugar syrup until it starts to bubble. Add green cardamom powder and roasted cashew nuts and raisins into the sugar syrup mix well. Add grated coconut and mix well. Keep cooking this mixture until it starts to thicken. Shrimp stir fry Ingredients: Fresh shrimp – 300 gm, deshelled and deveined Green chillie – 2 medium size, vertically slit Onion – 1 small size, thinly sliced Turmeric powder – ¼ tsp Red chilli powder – 1 tsp Black pepper powder – 1 tsp Dry ginger powder – 1/2 tsp Curry leaves – 2 sprigs Onion leaves – 4, finely chopped Salt as per taste Oil for sauté Instructions:        Take a small kadai, add some oil and heat it. When the oil is heated add slit green chillies, curry leaves and saute. Add onions and saute until they are half done. Add salt, shrimps and mix well. Sprinkle some pepper powder, dry ginger powder and mix well. When the shrimps are turning pink add some turmeric powder, red chilli powder and mix well.            Karada Avarebele/ Spicy Fried Hyacinth or Lablab beans Ingredients: Avarebele/ Lablab/Hyacinth beans – 500 gm, skin peeled Red chilli powder as per taste Salt as per taste Oil for deep frying Instructions:        In a small kadai add some oil for deep frying and heat it. When the oil is heated, add the avarebele or skin peeled lablab beans into the oil. Slowly, they start to sizzle and float up. TIP 1: Make sure that there is no excess moisture in the lablab beans before adding it to the hot oil. Otherwise, the oil would splutter all over and might burn your skin. TIP 2: Always add the beans over the ladle and then slowly drop them into the hot oil to prevent any oil from spluttering. Lettuce, Apple and Cucumber Salad: Super quick and easy breakfast or snack Ingredients: Fresh Lettuce – 1 bunch, finely chopped Carrot – 1 medium size, thinly sliced Cucumber - 1 medium size, finely chopped Apple – ½ medium size, finely chopped Fresh onion leaves – 1 small bunch, finely chopped Cashew nuts – ¼ tbsp, broken into smaller bits Sunflower seeds – 1.5 tsp Cranberry – 1/2 tsp Raisins – 8 Mayonnaise – 3 tbsp Fresh ground pepper – ¼ tsp Pepper powder – ¾ tsp Salt as per taste Instructions:           In a big bowl add chopped apple, lettuce, cucumber, carrots, onion leaves, raisins, cashew nuts, cranberries, sunflower seeds, salt, pepper powder, mayonnaise and freshly ground pepper. Tambittu – Shivaratri special Ingredients: Rice flour – 1 cup Roasted peanuts – 1 cup Fried bengal gram – 1 cup Sesame seeds – 1 cup, stir fried until they puff up Organic jaggery – 2.5 cups Sugar – 0.5 cup Green Cardamom – 6 Instructions:        Add sugar and cardamom into a blender and make fine powder. Add this into a bowl along with fried bengal gram, roasted peanuts, rice flour, sesame seeds and mix well.        In a thick bottomed vessel, add organic jaggery along with sprinkle of water. Allow this mixture to be heated. Keep stirring. This mixture starts to melt and turns into soft texture. Alasande Vade/ Cow peas Vada Ingredients: Split cow peas/ Alasande bele – 2.5 cups Red onions – 2 medium size Green chillies – 17 medium spice Mint leaves – 1 small bunch, finely chopped Coriander leaves – 1 small bunch, finely chopped Ginger garlic paste – 1.5 tsp Garam masala powder – 1 tsp Salt as per taste Oil for deep frying Instructions:         Add split cow peas in a big bowl and rinse them well with water to get rid of any dirt or dust. Soak them in water for around 5 to 8 hours. Drain the water and grind it into smooth paste using a wet grinder. Once done, dish out into a big bowl or container. TIP 1: Using wet grinder for grinding is better than mixer grinder as the batter turns out to be fluffier and the vadas will be soft after frying.
