Ridge gourd scrambled eggs Ingredients: Eggs – 6 Ridge gourd – 3 medium size Red Onions – 2 medium size, finely chopped Green chillies – 5 medium size, finely chopped Turmeric powder – 1 tsp Coriander powder – ½ tsp Garam masala powder – 1 tsp Coriander leaves – 1 small bunch, finely chopped Mustard seeds – 1 tsp Curry leaves – 3 sprigs Salt as per taste Oil for sautéing Instructions:        Wash the ridge gourd thoroughly to get rid of any dirt or dust. Scrape the ridges using a scraper. Cut the gourd into smaller pieces and put them into a pressure cooker. Pour ½ glass of water, salt and pressure cook the gourd for 1 whistle under medium flame. Make sure that the gourd is not over cooked. Otherwise, the gourd would get mushy and you wouldn’t feel the bite of the vegetable while eating.
