Ridge gourd scrambled eggs

Ingredients:

Eggs – 6
Ridge gourd – 3 medium size
Red Onions – 2 medium size, finely chopped
Green chillies – 5 medium size, finely chopped
Turmeric powder – 1 tsp
Coriander powder – ½ tsp
Garam masala powder – 1 tsp
Coriander leaves – 1 small bunch, finely chopped
Mustard seeds – 1 tsp
Curry leaves – 3 sprigs
Salt as per taste
Oil for sautéing

Instructions:

       Wash the ridge gourd thoroughly to get rid of any dirt or dust. Scrape the ridges using a scraper. Cut the gourd into smaller pieces and put them into a pressure cooker. Pour ½ glass of water, salt and pressure cook the gourd for 1 whistle under medium flame. Make sure that the gourd is not over cooked. Otherwise, the gourd would get mushy and you wouldn’t feel the bite of
the vegetable while eating. Allow it to cool down and then, drain the liquid into a small bowl. This vegetable stock is full of vitamins and minerals which can be consumed as clear soup. Yum!


       In a kadai, add some oil and heat it. When the oil is hot add mustard seeds and let them splutter. Add curry leaves, green chillies and saute. Add chopped onions and saute until they turn translucent. Now, add coriander leaves and saute for 30 seconds. Add cooked ridge gourd, turmeric powder, coriander powder, salt and mix well. Add garam masala powder and mix well. Now, lower
the flame and crack the eggs one after the other into this vegetable spice mix. Keep stirring so that the eggs coat the vegetables well. Continue to mix and stir fry these eggs under low flame until you no more notice the moisture or sticky texture of the eggs. That’s it. Super simple, easy and quick ridge gourd scrambled eggs is ready!

      You may serve this hot or cold as a side dish with rice, chapati, roti or dosas. This dish can be prepared for any meal be it breakfast, lunch or dinner. It’s a favorite recipe especially amongst the busy bees.
