Ridge gourd chutney


                                     Ridge gourd Chutney

Ingredients:

Ridge gourd – 4 big size
Fresh mint leaves – 1 small bunch
Coriander leaves – 1 small bunch
Red onion – 1 medium size, cubed
Garlic cloves – 10, medium size
Green chillies – 10, medium spice
Soaked tamarind – 1 medium lemon size
Roasted peanuts – 1/4 cup
Fresh coconut – 1/4 cup
Cumin seeds – 1/2 tbsp
Mustard seeds – 1 tsp
Curry leaves – 5 sprigs
Oil for tempering and sauteing
Salt as per taste

Instructions:

       Wash the ridge gourds thoroughly to get rid of any dirt or dust. Now, scrape the ridges of the ridge gourd using a scraper and set aside. This chutney is prepared only with the ridges. You may use the ridge gourd to make ridge gourd sambar, scrambled eggs, bajjis or spicy side dish. Please refer to these recipes on my you tube channel “Bisi Bisi Coffee”.

       In a thick bottomed kadai, add fresh green chillies along with 2 tablespoons of oil and saute under medium flame. When the chillies are roasted well add cumin seeds and let them sizzle. Then, add scraped ridges of the ridge gourd and saute well. Dish them out into the blender.




       In the same kadai, add red onions, garlic cloves, 1/2 tablespoon of oil and saute until the onions turn translucent. Add coriander leaves, mint leaves and saute until they start to wilt. Now, add fresh coconut pieces and saute for a minute. Add these into the blender and allow them to cool for a while.

       Add salt, roasted peanuts, soaked tamarind into the blender and blend them into coarse paste. Now, add some water and blend into fine or coarse paste based on your preference.

       In a kadai, add some oil for tempering and heat it. When the oil is hot, add mustard seeds and let them splutter. Add curry leaves and let them sizzle. Switch off the flame and add the tempering into the blended paste. Mix well and serve.

       Very easy, super quick and healthy ridge gourd chutney is ready within minutes. This can be served with various dishes like dosa, idli, chapati, puri, rice, ragi ball, millet roti etc. This unique dish has a special taste and makes you crave for it. Isn’t it the better way to use the scrapes of the ridge gourd instead of discarding them? A definite ‘YES’ from me.
