Kale & Spinach Potato rice Ingredients: Fresh Kale – 2 bunches, finely chopped Fresh Spinach – 1 bunch, finely chopped Potato – 1 medium size, cubed Red tomatoes – 2 medium size, finely chopped Red onions – 2 small size, finely chopped Green peas – 1/4 cup Ginger garlic paste – 1.5 tsp Turmeric powder – 1 tsp Coriander powder – 1/4 tbsp Red chilli powder – 1/2 tbsp Coconut powder – 3/4 tbsp Garam masala powder – 1/2 tsp Biryani masala powder – 3/4 tsp Mustard seeds – 1 tsp Curry leaves – 3 sprigs Salt as per taste Oil for sauteing Rice – 2 cups, rinsed and pre-soaked in 3.5 cups of water for 20 minutes Instructions:         Add sufficient oil into a pressure cooker and heat it. Quinoa Vegetable Khichdi Ingredients: Organic quinoa – 1 small cup Masoor dal – 1 small cup Yogurt/ curd – 1 small cup Beans – 1/2 cup, chopped Carrots – 1/2 cup, cubed Red onion – 1 medium size, thinly sliced Red tomato – 1 medium size, chopped Green chillies – 6 medium size, vertically slit Ginger garlic paste – 1 tsp Cumin seeds – 1 tsp Black pepper corns – 20 Black pepper powder – 1/2 tsp Turmeric powder – 1 tsp Cloves – 3 Cinnamon stick – 1/4 inch Green cardamom – 3, crushed Mint leaves – 1 small bunch, finely chopped Coriander leaves – 1 small bunch, finely chopped Curry leaves – 3 sprigs Salt as per taste Oil for sauteing Instructions: Add quinoa and masoor dal into a bowl and rinse well to get rid of any dirt or dust. Tips and tricks to make spongy & soft idlis at home  Ingredients:  Idli rice – 4 cups  Dosa rice – 1 cup  Urad dal/ Split black gram – 1.5 cups  Flattened rice/ Thick Poha – 1/2 cup  Cooking soda – 1 tbsp  Salt as per taste  Oil for greasing  Idli stand  Instructions:  Batter preparation:          Add idli rice, dosa rice and urad dal into a big container. Rinse them in water and wash thoroughly to get rid of any dust or dirt. After rinsing well, soak them in water for atleast 6 to 8 hours. Drain the water and add the soaked grains into a grinder/ blender and grind/ blend them into nearly fine paste or coarse paste depending upon your preference. While grinding, add little water whenever required but make sure that the batter is thick and not runny in texture.
