Mushroom Pepper fry


                                     Quick Mushroom Pepper fry

 Ingredients:

White button mushrooms – 200 gm, cleaned and sliced
Green bell pepper – 1 medium size, sliced
Red Onion – 1 small size, thinly sliced
Green chilli – 1 medium size, vertically slit
Ginger garlic paste – 1.25 tsp
Lemon – 1 medium size, ½ slice
Cumin seeds – 1 tsp
Pepper powder – ¼ tbsp
Curry leaves – 2 sprigs
Coriander leaves – 1 small bunch, finely chopped
Oil for sautéing
Salt as per taste

Instructions:

         In a thick bottomed kadai add some oil and heat it. When the oil is hot add cumin seeds and let them sizzle. Add green chilli, curry leaves and let them sizzle. Add sliced onions and saute until they turn translucent. Add ginger garlic paste and saute. Now, add sliced green bell pepper and saute under medium flame until they are 70% roasted. Now, add sliced mushrooms and saute until they are 80% done. Mushrooms leave out moisture while cooking and if over-cooked they would get mushy. Always be watchful while sautéing as they cook faster. Add lemon juice, pepper powder, salt and mix well. Saute for a minute or 2 and switch off the flame.



   
        Dish out into a clean plate, garnish with coriander leaves and serve hot. Quick and super easy Mushroom pepper fry is ready within 10 minutes. Enjoy the crunchy and tangy taste when u take a bite. Mmm.. mouth-watering. This simple dish can be prepared at any time either as side dish, quick snacks, lunch or dinner. Due to its mild spice even, kids would enjoy the dish. During my busy days, I have prepared this dish and packed for lunch box or have consumed for dinner. Sauteed mushrooms or vegetables are always a healthy way of consuming food. Many a times, we enjoy having sautéed veggies for dinner as they are not just lighter on calories but a better alternative than consuming
