Spicy Fried Hyacinth beans Karada Avarebele

           Karada Avarebele/ Spicy Fried Hyacinth or Lablab beans


Ingredients:

Avarebele/ Lablab/Hyacinth beans – 500 gm, skin peeled
Red chilli powder as per taste
Salt as per taste
Oil for deep frying

Instructions:

       In a small kadai add some oil for deep frying and heat it. When the oil is heated, add the avarebele or skin peeled lablab beans into the oil. Slowly, they start to sizzle and float up.

TIP 1: Make sure that there is no excess moisture in the lablab beans before adding it to the hot oil. Otherwise, the oil would splutter all over and might burn your skin.

TIP 2: Always add the beans over the ladle and then slowly drop them into the hot oil to prevent any oil from spluttering.

TIP 3: Always use more than 70% well grown lablab beans for preparing this dish. This kind of beans when deep fried makes them crunchy. Young beans when deep fried will be soft and not crisp.

TIP 4: Combination of young and well grown beans will maintain the right texture for eating. Otherwise, you would be tired chewing :)

       Fry these beans on medium flame stirring occassionally. After 4 to 6 minutes the bubbles would reduce and the beans start to float up. When the color of the beans slightly changes to light brown dish them out into a clean and dry container. Follow the same process to fry all the lablab beans. Once done sprinkle some red chilli powder, salt and mix them well. You may also toss to coat them evenly. Simple and tasty Avarebele is ready to serve. Once they cool down you may store them in an air tight container for later consumption.




       Winter seasons in Karnataka are more special because of the variety of dishes that are made from these beans. You name it we make it. Be it veg cusinies like avarekalu saru, non-veg cuisines like avarekalu koli saru, breakfast recipes like avarebele uppittu, snacks like avarebele vade, desserts like avarekalu obbattu etc. Infact, you would find wet markets all over filled with these beans and loads of customers buying them even though the prices are soaring. Due to it’s unique taste and being a seasonal crop many people flock to markets in search of them as soon as the season sets in.

       There is no doubt how much these beans are loved by Bangaloreans. We have Avarekai mela every year during mid of January where local farmers bring their fresh produce and sell them in varied forms like Avarekai, Avarekalu, Itkidbele etc. Variety of delicacies are also prepared with these beans and sold in food stalls just like any street food. The atmosphere and smile on people’s face is what keeps you engaged and let’s you experiment with food.

        Avarebele is one such dish my family yearns for. It’s crunchy texture and being an anytime snack it always tops our favorite snack list.
