Hyderabadi Khichdi


Ingredients:

Rice – 1 small cup
Masoor dal – 1 small cup
Yogurt/ curd – 1 small cup
Red onion – 2 medium size, thinly sliced
Green chillies – 6 medium size, vertically slit
Ginger garlic paste – 1 tsp
Cumin seeds – 1 tsp
Black pepper corns – 1 tsp
Turmeric powder – 1 tsp
Cloves – 5
Cinnamon stick – 1/4 inch
Green cardamom – 5, crushed
Mint leaves – 1 small bunch, finely chopped
Coriander leaves – 1 small bunch, finely chopped
Curry leaves – 3 sprigs
Salt as per taste
Oil for sauteing

Instructions:

        Add rice and masoor dal into a bowl and rinse well to get rid of any dirt or dust. Soak them in 3 cups of water for atleast 20 minutes.

        Add sufficient oil into a pressure cooker. When the oil is hot add cinnamon stick, cloves, pepper corns, green cardamom, cumin seeds, curry leaves and let them sizzle. Add green chillies and saute. Add 1/2 portion of sliced onions, ginger garlic paste and mix well. When the onions turn translucent add turmeric powder and mix well. Now, add 1 cup of yogurt and mix well. Add salt, remaining portion of sliced onions, chopped coriander leaves, mint leaves and saute for 30 to 40 seconds under medium flame. Now, add soaked rice and masoor dal along with the soaked water. Mix well. Close the lid and pressure cook for 2 to 3 whistles under medium flame. Switch off the flame and allow it to rest for 10 to 15 minutes before serving. Remove the lid and mix well. Serve it hot or cold along with ghee, cucumber raita or instant raita. Quick and easy Hyderabadi Khichdi is ready within minutes.

Instant Raita: Add thick yogurt into a small bowl. Over it sprinkle a dash of red chilli powder, pepper powder and salt. That’s it. Instant Raita is ready within seconds.


        Hyderabadi Khichdi can be prepared for breakfast, lunch or evening snacks. I swear by this dish when i am running out of time on a busy day, and, also when i crave for simple and spicy home made food. It’s the most preferred dish to savor when you are sick due to the mild spice and inclusion of various herbs. When you take a bite it just melts in your mouth. Mmm...

       Kids and Senior citizens would enjoy having Khichdi the most. Protein rich flavorful khichdi is not just light on your stomach but is also easily digestible. My doctor had adviced me to serve this food regularly to my toddlers.
