Badam Kesar Milk


Ingredients:

Milk – 2 glasses
Badam/ Almonds – 20
Kesar/ Saffron – 1 pinch
Cashew nuts - 8
Green cardamom – 4, crushed to powder
Sugar as per taste

Instructions:

        Take a glass and fill it partially with water. Add 12 almonds into the water and soak them for 6 to 8 hours. Once they are soaked well, using your fingernails or a blunt knife peel off the almond skin. Add the peeled almonds in to a blender and blend them into fine paste.

        Take the remaining raw almonds and thinly slice them. Cut the cashew nuts into smaller bits and set aside.

        Boil the milk in a thick bottomed pan under medium flame. Boil until the milk texture turns bit thicker and not too runny. Now, add saffron and mix well. Slowly the color of the milk changes to soothing bright yellow. Continue to boil the milk under low flame for some more time. Now, add the blended almond paste into the milk along with green cardamom powder, some sliced almonds, broken cashew nuts and mix well. Add sugar and stir until it dissolves. Boil this milk for 5 to 7 minutes and then switch OFF the flame. Transfer the Badam Kesar milk into a smaller container and allow it to cool down under room temperature. Now, store it in the fridge for atleast 1 to 2 hours for cooling effect. That’s it. Now, it’s ready to serve.



         Pour the cooled Badam Kesar milk into a glass. Sprinkle some broken cashew nuts, sliced almonds and a small pinch of saffron. Super delicious cold Badam Kesar milk is ready. This Badam milk can also be reheated and served hot based on your preference.

          Badam Kesar milk has an appealing color and delicious taste to which none say “NO” even if they are satiated. When you take a sip the cooling effect and the crunchy nuts just brings out “Aww” feeling leaving an ear to ear smile on your face. Isn’t it a great feeling? A dinner or full meal ending with Badam Kesar milk is what most people look forward to at weddings or buffets. Many times, we also consume this drink during evenings instead of regular tea or coffee. It’s great taste and soothing effect is why many prefer it as a Summer drink during hot and humid temperatures.
