Instant Rava Idli



Instant Rava Idli 

Ingredients: 

Idli rava – 4 cups
Split Bengal gram – 1.5 tsp
Split black gram – 1.5 tsp
Cumin seeds – 1.5 tsp
Split Cashew nuts - 15
Mustard seeds – 1.5 tsp
Baking soda – ½ tsp
Lemon salt – 1 tsp
Thick yogurt – 2 cups
Water – 2 cups
Clarified butter/ ghee – 3 tbsp
Grated Carrot – 1 small size
Grated Coconut – ¼ cup
Grated ginger – 1.5 inch
Green peas – ¼ cup
Green chillies – 6 medium size, finely chopped
Mint leaves – 1 small bunch, finely chopped
Dill leaves – 1 small bunch, finely chopped
Coriander leaves – 1 small bunch, finely chopped
Curry leaves – 2 sprigs, finely chopped
Oil for sautéing, tempering and greasing
Salt as per taste 

Instructions: 

         In a thick bottomed kadai add split cashew nuts, teaspoon of ghee and heat it. When the ghee melts roast the cashew nuts slowly under medium flame until they slightly change the colour to brown. Dish them out into a clean plate and set aside.

         In the same kadai add some oil and heat it. When the oil is hot add mustard seeds and let them splutter. Add split bengal gram, split black gram and saute until they slightly change the color to brown. Now, add cumin seeds and let them sizzle. Add grated ginger, chopped green chillies and saute. Add green peas, chopped mint leaves, dill leaves, curry leaves, coriander leaves and saute until they wilt. Add grated coconut and saute for 30 seconds. Into this, add idli rava, ghee and dry roast the rava for 1 to 2 minutes until nice aroma fills up your kitchen (or) until the rava turns warm. Now, add grated carrot, thick yogurt, baking soda, lemon salt and mix well. Make sure that the baking soda and lemon salt is added over the yogurt which helps in formation of the air bubbles. Air bubble formation plays an important role to make the idlis soft and fluffy. Add salt, water and mix well. You would notice that the air bubbles are formed uniformly in the batter. Instant Rava idli batter is now ready.



         Take the idli cooker and fill some water. Switch ON the flame and let the water be heated. Meanwhile, grease the wells of the idli stand with oil or ghee. Greasing helps the idli to not stick to the stand after cooking. Scoop out some idli batter and pour over the greased wells. Over it place the roasted cashewnut and gently tap it so that it sticks to the idli batter. Place the idli stand in the idli cooker. Follow the same process and place the remaining idli stands one over the other in the idli cooker. Once all the 3 stands are placed in the cooker, close the lid and cook the idlis under medium flame for 10 to 15 minutes. Switch OFF the flame and allow it to cool down for another 5 minutes.

          Take a spoon and gently create a crease around the idlis. Using your fingers dish out the idlis from the idli stand and place them on a clean and dry plate. Serve hot. Super delicious Instant Rava Idli is ready within minutes. You may serve these idlis with Vegetable gravy famously known as Sagoo, coconut chutney or peanut chutney.
