                                       Crispy Moong dal/ Moong dal namkeen

Ingredients:

Moong dal/ split green gram skinless – 2 cups
Red chilli powder as per taste
Salt as per taste
Oil for deep frying

Instructions:

       Add moong dal into a bowl and rinse it well with water to get rid of any dirt or dust. Soak them in water for at least 1 hour.

        Drain the water and pat dry the moong dal on a paper towel or thin cloth to remove any excess water. If required, you may also sun dry it for 10 to 15 minutes during noon until they stop sticking to the fingers.

TIP 1: Make sure that there is no excess moisture in the moon dal before adding it to the hot oil. Otherwise, the oil would splutter all over and might burn your skin.

        Take a deep-frying pan and add some oil in it. Switch ON the flame and allow the oil to heat. When the oil is heated, add the moong dal into it. Stir occasionally for even frying. After a minute or 2 the bubbles would reduce, and the fried dal slowly starts to sizzle and float up.

TIP 2: Always add the moong dal into the deep fry strainer. Then, slowly immerse the strainer into the hot oil to prevent any oil from spluttering. This method also eases our task while dishing out the fried dal.

TIP 3: Always use medium to high heat while deep frying. Otherwise, the dal takes too long to fry and will absorb a lot of oil.

          When the fried dal floats up, it means that they are ready. Dish them out into a clean and dry container or place them over a tissue paper to remove any excess oil.

          Follow the same process until all the dal is fried. Switch OFF the flame. Allow the fried dal to cool down under room temperature for 15 to 20 minutes. Now, sprinkle some red chilli powder and salt over it. Toss them well so that the dal is coated evenly. That’s it. Crispy and Crunchy moong dal snack is ready. You may also store them in an airtight container for later consumption.

          This recipe is mostly prepared in North India. To my knowledge, we, South Indians were introduced to this snack only by Haldirams 😊. I tried it at my workplace when one of my North Indian colleagues shared the snack with us during a meeting. Since then, this simple snack has become our quick snack whenever we feel like munching on something and can’t afford to take a short evening break.

           I have tried this recipe at home and has become an instant hit. My kids “LOVE” the crunchy texture and spicy flavour. It makes a good evening snack when served along with masala tea, coffee or juice. Do try out its various versions like salty, spicy or a combination of both.
