Pepper Rasam


Pepper Rasam: How to make Andhra style pepper rasam in 5 min?

Ingredients: 

Tamarind – medium lemon size 
Pepper powder – ½ tbsp 
Cumin powder – ½ tbsp 
Fenugreek powder – ½ tsp 
Coriander powder – ¼ tbsp 
Garlic cloves – 8 to 10 medium size, minced 
Dry red chillies – 7 to 9, broken into halves 
Mustard seeds – 1 tsp 
Curry leaves – 2 sprigs 
Coriander leaves – small bunch for garnish 
Asafoetida – pinch (optional) 
Salt as per taste 
Oil for tempering  



Instructions/ Procedure:

        Add tamarind into a bowl filled partially with fresh water and let it soak for about 20 minutes. Once the tamarind gets softer, squeeze the pulp and remove the fibre.

        Add oil into a thick bottomed kadai and let it heat. Once the oil is heated, add mustard seeds. When the mustard seeds start spluttering, add curry leaves and let them sizzle. Add dry red chillies, minced garlic, pepper powder, cumin powder, fenugreek powder, coriander powder and saute for 30 seconds. Now, add the coriander leaves and saute. Add tamarind water, asafoetida (optional) and mix well. Add salt, fresh water as per the consistency you prefer and mix well. Let this mixture be heated until it starts to boil. When the foam is forming on the surface of the rasam, switch off the flame. Spicy and tangy pepper rasam is ready to serve.  

       It can be served with hot rice. Once the rasam has cooled down, you can take an empty glass and fill half of it with plain yogurt/ buttermilk and another half with rasam. Stir well and savour it. It is a unique way of drinking the rasam but am sure you would like it. This dish is specially prepared during winters to keep yourself warm and as well as to protect from cold. 

      This rasam is served without fail in any South Indian wedding platters and in the hotels/ restaurants as part of South Indian meals.
