Creamy Spinach soup

Spinach soup: Easy and healthy soup anytime, anywhere

Ingredients: 

Fresh spinach – 1 big bunch 
Green bell pepper – 1/2 small size 
Garlic – 7 medium size cloves 
Cumin seeds – 1 tbsp 
Coriander leaves – small bunch 
Green chillie – 2 small (optional) 
Ginger – 1 inch small size 
Onion – 1/2 big size 
Pepper corns – 12 to 15 
Pepper powder – as per taste 
Fresh cream – as per taste 
Salt – as per taste 
Butter – 2 tbsp 
Oil for saute 
Blender



Instructions:

       In a large thick bottomed kadai, add some oil and heat it. Once the oil is heated, add pepper corns and cumin seeds. Once cumin seeds start to sizzle, add green chillie, garlic, ginger and onions. Saute until onions turn half cooked. Now, add bell pepper and stir fry until they are half done and onions are translucent. Now, add spinach leaves, coriander leaves and stir fry until they start to wilt. Once this mixture cools down, add it to a blender and blend it to a smooth paste. 

      Add butter in the kadai and let it melt. Now, add the blended smooth paste and mix well. Add sufficient water as per the consistency you prefer and mix well. Now, add salt, pepper powder and stir well. Let it simmer for a minute or 2. When ready, add fresh cream and mix well. Nice, rich, creamy green texture is formed. Dish out to a bowl and serve hot. Before serving, you may also decor it with fresh cream design on the top along with croutons, pepper powder and salt if required.
