Egg & Sweetcorn Cheese Sandwich - Easy & quick breakfast, snack

Ingredients: 

White bread – 4 slices 
Soft boiled eggs – 4, cut into small pieces 
Sweet corn – 1/2 cup boiled kernels 
Cheese – as per taste 
Mayonnaise – 3 tbsp 
Pepper powder – 1 tsp (optional) 
Crushed pepper – 1/4 tsp 
Red chillie flakes – 1/4 tsp 
Flax seed powder – 1/2 tbsp (optional)
Crushed sugar as per taste 
Salt as per taste 
Gingely oil or butter for toasting the bread 



 
Instructions: 

        In a bowl add boiled sweet corn kernels, crushed pepper, salt, sugar, mayonnaise, eggs, red chillie flakes, flax seed powder and mix well. This forms the filling. You may vary the seasoning as per your preference. Toast the bread on hot tawa using oil or butter. Once done, dish it out into a plate. Place cheese on the bread slice and spread the corn and egg filling all over. Take another slice of bread along with cheese and place it over this filling. Press gently on all sides and hold it firm in the centre. Run the knife diagonally over the bread to cut it into 2 pieces. Any time quick and healthy breakfast or snack is ready to serve. Enjoy!!
