Mushroom Masala curry
Mushroom Masala curry: Simple and tasty recipe
Ingredients:
White button mushrooms – 400 gm
Coriander powder – 1/2 tbsp
Red chillie powder – 1/2 tbsp
Turmeric powder – 1 tsp
Roasted peanuts – 1/2 tbsp
Red onion – 1 medium size, diced
Garlic cloves – 6 big size
Fresh coconut – 1/5 cup
Cinnamon stick – 1/4 inch
Cloves – 3
Coriander leaves – 1 small bunch
Mustard seeds – 1 tsp
Curry leaves – 2 sprigs
Salt as per taste
Oil for tempering
Instructions:
Cut the white button mushrooms into halves or quarters and set aside.
Add all the spices like coriander powder, red chillie powder, turmeric
powder, roasted peanuts, cloves, cinnamon stick, coriander leaves,
onions, garlic cloves and coconut into a blender. Add water and blend
them into fine paste.
In a thick bottomed kadai, add some oil and let it
heat. Once the oil is heated, add mustard seeds and let it splutter.
Add curry leaves and let them sizzle. Now, add the blended paste and mix
well. Let the masala be roasted well until you see the oil separating
out from the spice mix. Add salt, water and adjust the consistency of
the gravy based on your preference. Please do note that mushrooms also
leave out some water while they are cooked. Based on this, you may
decide the quantity of water required. I have added around 3/4th glass
of water. Let this mixture boil until you see a layer of foam forming on
the surface and puffing up.
Lower the flame and add the sliced mushrooms. Stir well and let them
cook for 3 to 4 minutes. You may also cover the lid and cook for
expediting the process of cooking. Since mushrooms do not take long to
cook, it is advisable to check them often stirring the masala
occasionally. Once the mushrooms are well done, switch off the flame
and serve hot with roti, chapati, puri, rice, ragi ball, dosa, idli etc.
This dish makes a great combination with chapati, puri or rice. It
tastes similar to meat when cooked just right. The crunchy texture and
