Beans Palya/ Stir fry

French Beans palya/stir fry: Very easy and healthy recipe

Ingredients:

Fresh green beans – 500 gm
Fresh grated coconut – 2/3 cup
Red onion – 1 medium size, finely chopped
Green chillies – 3 medium size, finely chopped
Coriander leaves – 1 small bunch, finely chopped
Split black gram – ¼ tbsp
Split bengal gram – ¼ tbsp
Mustard seeds – 1 tsp
Curry leaves – 2 sprigs
Salt as per taste
Oil for tempering

Instructions:

Wash the fresh beans thoroughly and finely chop them. Add them into a pressure cooker along with salt and water and cook them well. Drain the water if any and set the cooked beans aside.

In a thick bottomed kadai, add some oil and heat it. When the oil is heated, add mustard seeds and let it splutter. Add split bengal gram, split black gram and saute until they slightly turn brown. Add curry leaves and let them sizzle. Add green chillies and saute. Now, add chopped red onions and saute until they turn translucent. Add fresh coriander leaves, cooked beans, salt and mix well. Lastly, add fresh grated coconut and mix well. Stir fry for a minute or 2 and switch off the flame. Oila! Very easy, yummy and healthy beans palya or side dish is ready within minutes. Enjoy!

You may serve this dish to family and guests along with rice, roti, chapati, puri, dosas etc. This makes a great combination when served with rice and tomato rasam. This dish is a must in many South Indian wedding platters.

This was my favorite side dish during childhood times. The crunchy and sweet flavor from the grams and veggies is what makes this simple dish special and lets you crave. I used to binge whenever my mom cooked it. I have great memories plucking them fresh from the garden and cooking them. Happy and healthy eating! Try it out and let me know your comments.
