Pineapple Kesari bath: Easy and quick dessert

Ingredients: 

Sooji rava – 1.5 cups, small size cup 
Ghee/ clarified butter – 100 ml 
Sugar – 1.5 cups, powdered 
Green cardamom – 2, crushed 
Pineapple – 1/2 small size 
Cashewnuts – 25 gm, split open 
Raisins – 25 gm 



Instructions: 

        In a thick bottomed pan, add sooji rava, 1 tablespoon of ghee and roast the rava in medium flame until nice aroma is filling your kitchen. Otherwise, make sure that the rava is warm enough and when the texture is slightly changing switch off the flame, dish it out into a plate and let it cool. 

       Now, cut the pineapple into small pieces and add it into a blender to make juice. Strain the fibre using the strainer. 

       Add the remaining ghee into the pan and let it heat. Once the ghee has melted, add cashew nuts and roast them until they slightly turn brown. Now, add raisins and saute until they puff up. Add water (1 glass) and pineapple juice (3 glasses) altogether 4 glasses (little more than double the quantity of rava) into the pan along with powdered sugar and cardamom. Mix well and allow this to boil. Once the water starts to boil, lower the flame to sim and add the rava slowly stirring continuously in order to avoid any formation of lumps. Once the mixture is smooth, add a teaspoon of ghee (optional) and cover the lid and let it simmer for a minute. Switch off the flame and serve it hot or cold. Enjoy! 

       Generally, this dish is served along with Upma or Kara bath. But, traditionally served as prasad at temples or served in weddings and prepared mostly at home during festive occasions or for quick snacks. What are you waiting for?
