Mint/ Pudina Ghee rice: How to make quick & easy Pudina Ghee Rice using Pressure cooker?

Ingredients: 

Rice – 1.5 cups 
Red onion – 1 medium size, thinly sliced 
Mint leaves – 1 big bunch, finely chopped 
Coriander leaves – 1 medium bunch, finely chopped 
Green chillies – 5, vertically slit 
Fresh green peas – 1⁄4 cup 
Ginger garlic paste – 1⁄2 tbsp 
Cumin seeds – 1⁄4 tbsp
Pepper powder – 1⁄2 tsp 
Garam masala powder – 1⁄2 tsp 
Cashewnuts – 8, split open 
Green cardamom – 2 to 3, crushed 
Cinnamon stick – 1⁄4 inch 
Cloves – 3 
Bay leaf – 2 
Marati moggu – 3 
Star anise – 3 petals 
Clarified butter/ Ghee – 1.5 tbsp 
Salt as per taste 
Oil for sauteing 



Instructions/ Procedure: 

       Wash the rice and pre-soak it in water for about 20 minutes. Water used to cook this dish will generally be double the quantity of rice used. Since I am using 1.5 cups of rice, I am soaking the washed rice in 3 cups of water. You may use Jeera rice, Sona masoori rice or Basmati rice for this preparation. My family prefers Sona masoori rice and so you would see me using this in majority of the dishes. 

       Add some oil in the pressure cooker and let it heat. Once the oil is heated, add green chillies and saute. Add all the spices like cinnamon stick, cloves, crushed green cardamom, marati moggu, star anise, cumin seeds, bay leaf, cashewnuts and saute until the cashews slightly change the color to brown. Add sliced onions, green peas and saute until onions turn translucent. Add ginger garlic paste, chopped mint leaves, chopped coriander leaves and stir until they start to wilt. Now, add garam masala powder, pepper powder, salt and mix well. Saute this mixture for about 30 to 45 seconds. Add ghee and once it melts down, add the soaked rice and water. Mix well. Cover the lid and let it cook under medium flame for about 3 to 4 whistles. Switch off the flame and let it cool for about 5 to 7 minutes. When all the pressure is released, open the lid and mix well. Spicy and tasty mint ghee rice is ready within minutes.

       Serve this hot for breakfast or pack it in lunch box. It may also be served along with raita or chutney. Healthy eating makes healthy mind.
