Mandakki Usli/ Puffed rice Upma: How to make simple and tasty snack?

Ingredients: 

Puffed rice – 150 gm 
Red onion – 1 small size, finely chopped 
Green chillies – 5, vertically slit 
Split bengal gram – 1 tsp 
Split black gram – 1 tsp 
Mustard seeds – 1 tsp 
Cumin seeds – 1 tsp 
Curry leaves – 2 sprigs 
Coriander leaves – 1 small bunch for garnish 
Salt as per taste 
Oil for tempering



Instructions: 

       Take a big bowl and fill 1/2 of it with fresh water. Add puffed rice to it. Make sure that they are slightly wet and then dish them out. Please remember that the puffed rice should not be completely soaked which makes the dish soggy. The process of making them bit wet helps them loose the crispness which is ideal for making this dish. 

       In a thick bottomed kadai add oil for tempering and heat it. Once the oil is hot, add mustard seeds and let them splutter. Add split bengal gram, split black gram and saute until they slightly turn brown. Add cumin seeds and let them sizzle. Add green chillies, curry leaves and saute. Add red onions and saute until they turn translucent. Add the puffed rice and mix well. Add coriander leaves, salt and mix well. 

      Very easy and tasty Puffed rice upma is ready! Any time, quick breakfast or snack can be prepared within minutes. You may serve it to guests or enjoy with family and friends. This is a typical North Karnataka dish served along with mirchi/chillie bajji and tea. Try this out and let me know your comments
