Moringa Chicken Soup: Tasty and healthy soup

Ingredients: 

Chicken with bones – 300 gm 
Fresh Moringa leaves – 1 cup 
White radish – 2 medium size, diced 
Green chillies – 5, vertically slit 
Fresh Coconut – 1/5 cup 
Garlic cloves – 20 medium size 
Ginger – 2 ½ inch 
Pepper corns – 35 
Cumin seeds – 1/5 tbsp 
Cinnamon stick – ¼ inch 
Cloves – 4 
Lemon – ½ slice (optional) 
Onion leaves/ Chives – small bunch for garnish 
Salt as per taste 
Oil for stir frying



Instructions: 

      Take fresh moringa leaves and separate the stem. Wash them well and drain the water. Use young moringa leaves for this preparation.

      In a blender, add cumin seeds, pepper corns, cinnamon stick, cloves, ginger, garlic, fresh coconut, water and blend into fine paste.

      In a deep-frying pan add some oil and heat it. Once the oil is heated, add slit green chillies and saute. Add white radish cubes and saute until they are 3/4 th done. Add the blended spice mix into the pan and saute for a while. When the oil is separating out from the spice mix, it means that the spices are well cooked. Add the chicken and stir fry for a minute. Add some salt and saute until the chicken is 80% done. Now, add moringa leaves and saute for a minute or 2. Add fresh water based on the consistency you prefer and mix well. Let this mixture cook until the chicken is well done. There would be a layer of froth forming on the surface of the soup. It’s time to dish out, garnish with onion leaves or chives and serve hot! You may squeeze in some lemon juice if required.

TIP 1: Make sure that young moringa leaves are used for this preparation.

TIP 2: Make sure that the moringa leaves aren’t over cooked. Otherwise, they would leave a bitter taste in the dish and you wouldn’t enjoy having this soup.

TIP 3: Excess consumption of moringa leaves causes diarrhoea. Always use limited quantity and experiment with the amount that suits you better.
