Rava Laddoo

Rava Laddoo - Easy to make soft rava laddoos

Ingredients:

Sooji rava – 2 cups
Green Cardamom - 3
Sugar – 1 cup, put in a blender and make fine powder
Cashew nuts – 12 to 14, broken
Raisins – 15 to 20
Ghee – 3 tbsp
Milk – 1 glass
Grated coconut – 2 tbsp. If it is fresh coconut, after grating stir fry until it’s slightly brown. By this way, the laddoos can last long.

Instructions:

In a thick bottomed pan, add a tbsp of ghee and heat the pan. When ghee is melting, add broken cashews and stir fry. When the cashews are slightly turning brown, add raisins and stir fry further until raisins start to blow up. Add sooji rava to the same pan and stir well until the rava is roasted well. You’ll get a nice aroma when stirring. Now, simmer the flame, add the sugar powder, cardamom powder, grated coconut and mix well until there are no lumps. Add ghee, sprinkle warm milk and mix well. It will start to bind. Now, switch off the flame and let the mixture cool for a while.

When the mixture is still bit hot/ warm, grease your palm with ghee and make round balls. Continue this process until all the mixture is used up to make the round balls. While making balls, if you think the mixture is splitting up or dried up, sprinkle some warm milk, mix well and make a ball. Place all these balls in a plate and let them cool. Once cooled, the laddoos are ready to be served. You can store them in a cool & dry place in an air tight container. They can be consumed within 3 to 4 days. If stored for long (more than 5 days to 12 days), the flavour decreases and so its advisable to consume at the earliest. Enjoy!
