Bhindi fry Okra masala
Okra spicy fry/ Bhindi masala/ Ladies finger masala
Ingredients:
Red onion – 1 medium size, finely chopped
Red tomatoes – 2 medium size, finely chopped
Coriander leaves – 1 small bunch, finely chopped
Turmeric powder – 1 tsp
Coriander powder – ¼ tbsp
Red chillie powder – ¼ tbsp
Biriyani masala – ½ tsp (optional)
Super Garam masala – ½ tsp
Mustard seeds – 1 tsp
Curry leaves – 3 sprigs
Salt as per taste
Oil for tempering and sautéing
Instructions:
Being rich in nutrients and beneficial antioxidants, this dish is the simple way to introduce kids to healthy eating.
I am using 2 varieties of ladies finger for preparing this dish as they
were grown in our terrace
garden. One is original/nati variety (pale yellow/light green) and the
other one is hybrid variety (dark green) which you often find in the
super markets. You may use which ever variety you prefer.
In a thick bottomed kadai, add some oil and heat it. When the oil is heated, add mustard seeds and let it splutter. Add curry leaves and let them sizzle. Add chopped tomatoes, red onions and saute until the tomatoes turn soft and onions turn translucent. Add salt, turmeric powder, coriander powder and red chillie powder. Mix well and saute until the oil starts to slowly separate out. Now, add chopped ladies finger and mix well. Close the lid and cook on low flame stirring occasionally. When the ladies fingers are 90% done, add biriyani masala, super garam masala, fresh coriander leaves and mix well.

Close the lid and let this cook for a minute or 2. Very easy and spicy
ladies finger palya is ready within minutes. Enjoy!
You may serve this dish to family and guests along with rice, roti,
chapati, puri, dosas etc. This can be used as side dish or mixed with
rice. This dish can be served for breakfast, lunch or dinner. Try it out
