Village style Veg Thali/ Lunch menu


Tamarind Gojju: Very quick and healthy gravy (Village style / Old methods/ Forgotten recipe)

Ingredients: 

Brinjal – 3 small size, round ones preferred 
Tamarind – 1 table tennis ball size, soaked in water 
Red onions – 2 small size, cubed 1/2 inch 
Green chillies – 8, medium size 
Mustard seeds – 1 tsp 
Curry leaves – 2 sprigs 
Coriander leaves – 1 small bunch for garnish 
Salt as per taste 
Oil for tempering 

Instructions: 

       Coat the brinjals with oil and burn/cook them on direct fire as shown in the video. You may also use charcoal to cook the brinjal like the way we barbeque meat. When you touch the brinjal it should be soft and the outer layer will be burnt. Please remove the burnt/black skin and set aside.

       Soak tamarind in the water for 20 minutes. Add salt, squeeze out the pulp and remove the fibre. 

       Meanwhile, in a pan add green chillies, oil and saute until the chillies are well cooked. Dish them out. In the same pan add some oil for tempering and heat it. When the oil is heated, add mustard seeds and let them splutter. Add curry leaves and let them sizzle. Now, add red onions and saute until they turn translucent. Add coriander leaves and let them wilt. Add tamarind pulp into this and add sufficient water based on your preference. Mash the brinjal, green chillies using hand by squeezing/pinching it hard in order to tear open. This helps to release the flavors. Put them in the tamarind mixture and mix well. 

       Simple, very easy and tangy tamarind gojju is ready to serve. You may serve this with rice, millet rice or ragi ball that is made using small quantity of rice. Please refer to my other videos to know how to make ragi balls. Enjoy this delicious old style cooking. 




Suvarnagadde/ Elephant foot Yam Palya:   

Ingredients: 

Elephant foot Yam – 1 medium size 
Red onions – 1 small size, diced 
Garlic cloves – 7 
Coriander powder – 1/4 tbsp 
Red chillie powder – 1/4 tbsp 
Turmeric powder – 1 tsp 
Roasted peanuts – 1/2 tbsp 
Fresh grated coconut – 1/4 cup 
Cinnamon stick – 1 inch 
Cloves – 3 
Mustard seeds – 1 tsp 
Curry leaves – 2 sprigs 
Coriander leaves – 1 small bunch for garnish 
Salt as per taste 
Oil for tempering 

Instructions: 

        Remove the skin of the yam and wash it well. Cut the yam into smaller cubes. Add them into the pressure cooker along with salt, water and cook well. Drain the water and let it cool. 

        In a blender, add cinnamon stick, cloves, coriander powder, turmeric powder, red chillie powder, roasted peanuts, grated coconut, garlic cloves and blend into coarse powder. 

        In a thick bottomed pan, add some oil and heat it. When the oil is heated add mustard seeds and let them splutter. Add curry leaves and let them sizzle. Add onions and saute until they turn translucent. Add the blend spice mix and saute well. Add coriander leaves, cooked yam and saute until the spice mix coats the yam well. Add some salt and mix well. Leave it on simmer for a minute or 2 stirring occasionally.

        Switch off the flame and serve hot. Creamy and spiced yam is ready! Enjoy with family and friends. You may serve this for lunch or dinner with roti, chapati, puri, rice or dosas.

NOTE: Always choose the biggest yam. Only the well grown ones are apt for cooking. The young ones have a different flavor and will be juicy and sticky which doesn’t taste as good as the well grown one. You may differentiate them by the color. The inner part/flesh of the cut yam for a well grown one will be a nice tinge of peach color where as the young one will be sparingly white/cream here and there.

        For the lunch menu, serve some rice in a plate. Add the tangy tamarind gojju on the rice or serve it in a bowl. Add the suvarnagadde palya, peanut chutney, thick yogurt in different bowls. Place them in the serving plate around the rice one after the other. Fry fresh papad and serve 1. Cut the fresh cucumber into slices and place next to the rice. Add fresh mango pickle and roasted peanuts in the plate. Distinct village style wholesome/ balanced meal is ready to serve as lunch or dinner platter.
