Cheese & Egg Pumpkin Roll

Ingredients: 

Wheat flour 1.5 cup 
Grated Pumpkin – 3/4 cup 
Grated Pizza cheese – 1/2 cup 
Eggs - 3 
Pepper powder – 1 tsp 
Red chillie powder – 1 tsp 
Salt as per taste 
Oil for pan frying



Instructions: 

      In a thick bottomed pan, add a tablespoon of oil and heat it. Add grated pumpkin and saute until it turns soft. Let it cool down. In the same pan, add wheat flour, salt and a table spoon of oil and mix well. Add water and knead the dough into medium soft/ soft ball. Take small batches of the dough and make small balls. On a flat surface, sprinkle some flour, place the ball and roll into small, round and thin chapatis/ tortillas/ rotis. In another pan, add a teaspoon of oil and heat it. Break open 2 or 3 eggs, sprinkle black pepper powder, salt and red chillie powder. Scramble and mix them well into the eggs and saute till the egg is soft and cooked well.

      In a tawa, add some oil and spread it across. Heat the tawa and add the chapati. Sprinkle some oil over the chapati so that it doesn’t dry out. Flip it occassionally and make sure the chapati cooks evenly on both sides over medium flame. Once the chapati is almost cooked, add scrambled eggs, cheese and roll it. Dish it out into a plate and serve hot. Relish with family and friends. Quick and easy cheese and egg pumpkin roll is hard to resist. Enjoy!!
