Spicy Shankarpali, Easy Doritos


Spicy Shankarpali – Crispy diamond snacks

Ingredients:
White flour/ Maida – 3 cups Chiroti rava – 1 tbsp Ajwain/ Carom seeds – 1 tsp Red chilli powder – 1/2 tbsp White sesame seeds – 1/4 tbsp Clarified butter/ Ghee – 1 tbsp Cookie cutter/ Pizza cutter Salt as per taste Oil for deep frying



Instructions:
In a big container add maida, chiroti rava, carom seeds, red chilli powder, salt, ghee, white sesame seeds and mix well. Slowly add water in small portions and knead well to make a soft dough. Close it with a lid or cover the dough with damp cloth and set it aside for 20 to 30 minutes.

Take big portion of dough and make a round ball. Dust the working space with white flour. Pat the round ball gently over the flour. Using a rolling pin spread the round ball into flat round puris or rotis with slight thickness about 1 mm to 2 mm max. Using a cookie cutter or pizza cutter, cut the roti into different shapes as you prefer. Ex. Diamonds, triangles, squares, stars, flowers etc. You can also be more creative and make your own shapes. Meanwhile, in a deep frying pan add sufficient oil for deep frying and heat it. Once the oil is heated, add the cut shapes into it. These shapes start to sizzle and puff up. Gently, flip them over and let them fry evenly on both sides. They slowly start to turn golden brown. This is when they should be dished out into a clean and dry container. Follow the same process until all the dough is used up and fried. Let them cool for 10 to 15 minutes before serving. This is when they turn crisp as the heat fades away. Store them in an air tight container and consume within a week. As it ages, the crispness starts to reduce. So, storing it for more than 7 days is not recommended.

Enjoy these crispy snacks with family and friends. I am sure kids wouldn’t stop at 1 serving as they taste more like Doritos. You may eat them as is or dip in cheese sauce and have during tea time. Try it out and let me know your comments. Happy munching!
