Pumpkin Puri/Poli
Pumpkin Poli: Easy, healthy and delicious snack or dessert
Ingredients:
Wheat flour 1.5 cup
Grated Pumpkin – 3/4 cup
Powdered sugar as per taste
Powdered cardamom as per taste
Salt as per taste
Oil for deep frying
Instructions:
In a thick bottomed pan, add a tablespoon of oil and heat it. Add grated
pumpkin and saute until it turns soft. Let it cool down. In the same
pan, add wheat flour, salt and a table spoon of oil and mix well. Add
water and knead the dough into medium soft ball. Take small batches of
the dough and make small balls. On a flat surface, sprinkle some flour,
place the ball and roll into small, round and little thick chapatis/
tortillas/ rotis/ puris.
In a deep fry pan, add sufficient oil for deep frying and heat it. Once
the oil is piping hot, add the puri into the pan. Using the laddle try
to press down the puri slightly (OR) try to dishout and pour the hot oil
on the puri. This process helps the puri to puff up. Flip the puri and
cook on the other side evenly. Once done, dish it out to a plate.
NOTE: If the puris are too thin or if the oil is not hot enough, the puris do not puff up.
Mix cardamom powder and sugar powder well. Add this mixture into the
strainer, place it above the puri and tap the strainer slightly so that
the sugar powder coats the puri evenly and forms a thin layer of sweet.
You can serve it as is or you may also add warm milk or almond milk over
it for making the dish even more flavourful. Enjoy with family and
friends.
