Millet Pumpkin rice
Ingredients:
Barnyard millet – 1/2 cup, washed and pre-soaked for 20 to 30 mins
Grated Pumpkin – 3/4 cup
Spicy green chillies – 2, small size, thinly sliced
Red onion – 1/2, small size, thinly sliced
Green bell pepper – 1/2, small size, sliced
Baby corn – 2, medium size, diced and pre-cooked
Cumin seeds – 1 tsp
Black pepper powder – 1 tsp
Dry coconut powder – 1 tsp (optional)
Salt as per taste
Oil for stir fry
Instructions:
Cook the barnyard/oodhalu millet rice along with a teaspoon of oil and a
pinch of salt. This makes the grain non-sticky and will be separated
out from each other. This way of cooking millet rice is most preferable
for any stir fried dishes.
In a thick bottomed pan, add some oil and heat it. Now, add cumin seeds
and let them sizzle. Add green chillies, red onions and stir fry until
they turn translucent. Add green bell pepper and stir fry until they are
half done. Add pre-cooked baby corn and saute for a minute. Add grated
pumpkin and saute until they are 80% done. Add salt, pepper powder and
mix well. Add pre-cooked millet rice and mix well. Let it sit in low
flame for a minute or 2 and stir occassionally. Once the dish is ready,
you may add dry coconut powder and mix well. Delicious pumpkin millet
rice is ready to serve. Dish out to a container and serve hot. You may
also garnish with grated pumpkin and dry coconut powder. Enjoy!! :)
