Tips and tricks to make spongy & soft idlis at home  Ingredients:  Idli rice – 4 cups  Dosa rice – 1 cup  Urad dal/ Split black gram – 1.5 cups  Flattened rice/ Thick Poha – 1/2 cup  Cooking soda – 1 tbsp  Salt as per taste  Oil for greasing  Idli stand  Instructions:  Batter preparation:          Add idli rice, dosa rice and urad dal into a big container. Rinse them in water and wash thoroughly to get rid of any dust or dirt. After rinsing well, soak them in water for atleast 6 to 8 hours. Drain the water and add the soaked grains into a grinder/ blender and grind/ blend them into nearly fine paste or coarse paste depending upon your preference. While grinding, add little water whenever required but make sure that the batter is thick and not runny in texture. Quick & Easy Onion Sambar for Idli, Dosa or Rice Ingredients:  Tur dal – 1 cup  Red Onions – 2 big size, finely chopped  Red Tomatoes – 4 medium size, finely chopped  Garlic cloves – 10 medium size, finely chopped  Coriander powder – ¼ tbsp  Red chilli powder – ½ tbsp  Turmeric powder – 1 tsp  Sambar powder – ¼ tbsp  Garam masala powder – 1 tsp  Ginger garlic paste – 1 tsp  Coriander leaves – 1 small bunch, finely chopped  Mustard seeds – 1 tsp  Curry leaves – 2 sprigs  Salt as per taste  Oil for tempering Instructions:         Wash and rinse Tur dal to get rid of any dirt or dust. Paal Poli/ Haalu holige: Forgotten recipe Ingredients:  Poppy seeds – 50 gm  Green cardamom – 8  Chiroti Rava – 25 gm  White flour/ Maida – 3 cups  Fresh coconut – ½ shell, sliced  Sugar – 200 gm or as per taste  Ghee – 1 tbsp  Milk – ¼ litre  Salt as per taste  Oil for deep frying   Instructions:           In a thick bottomed kadai, add Chiroti rava and saute until it gets warm or slightly changes the color. Dish it out. Add poppy seeds and saute until they slightly turn brown. Add poppy seeds, little sugar and green cardamom into the blender and blend well. Add water and make it into a fine paste. Musk melon juice: Summer fruit that prevents dehydration Ingredients:  Fresh musk melon – 1  Sugar as per taste  Water  Blender Instructions:        Cut the musk melon into halves. Then, make more smaller slices. Take a slice, remove the seeds and cut it into smaller pieces vertically. Run the knife horizontally under the pulp in order to remove the skin.       Follow the same procedure for all the slices. Add them into a blender along with sugar and water based on the sweetness and consistency you prefer. Blend well. Pour it into a glass and serve as is or you may add some ice cubes before serving. Indian Salmon fry: Easy and tasty fry Ingredients:  Indian Salmon – 450 gm  Dry coconut powder – 2 tbsp  Red chillie powder – 1/2 tbsp  Ginger garlic paste – 1/2 tbsp  Dry ginger powder – 1 tsp  Pepper powder – 1 tsp  Turmeric powder – 1 tsp  Lemon – 1/2 slice  Salt as per taste  Oil for frying  Instructions:         Take a whole cleaned Indian Salmon and cut it into fillets. You may also use readily available steaks to prepare this dish. In a bowl or plate mix all the ingredients well into a fine thick paste. If required, you may sprinkle some water to bind the masala into a small ball. Now, add the fillets and coat them well with the masala. Refrigerate it for 20 mins so that the fillets get marinated.
